This is the first in my series of inventive and elevated vegan bagel lunch variations that I will be posting over the next few months. Homeschooled, public schooled, private schooled, or whatever type of schooling you do, we’re all in the middle of the first semester and we’re all busy and hungry, hopefully this variation will be helpful for you, it just takes 5 to 10 minutes!
How to make a simple and fast lunch/after-school bagel:
What you’ll need:
Your favorite organic bagel. I usually get bagels from either my local farmers market or the everything bagel from Dave’s Killer Bread.
A vegan and organic cream cheese type thing. I would suggest the Kite Hill “cream cheese”, or the Miyoko’s Creamery Sensational Scallion “cream cheese”.
3 to 4 slices of Tofurky deli slices, or a similar fake meat. If you do the Tofurky I would suggest the hickory smoked flavor.
How to make it:
Slice the bagel in half
This next step is optional, though it will make it easier to spread the “cream cheese”: toast it to your liking, or until slightly crisp.
Spread a thick layer of the cream cheese you chose on both halves of the bagel.
Put slices of Tofurky deli slices on one half of the bagel. I do 3 to 4 slices.
Try slices of tomato and/or avocado, or any other toppings you like.
Put both sides together and enjoy your fast vegan bagel lunch!
