This week I’m posting another recipe while I work on some longer articles! I hope you enjoy this Simple Asparagus with Lemon “Butter”!
- 1/4 cup water
- 8 or more (depending on thickness) organic asparagus, bottoms snapped
- 1/2 tbsp, or to taste, “butter” (Margarine or your choice of vegan butter)
- 1/2 tbsp, or to taste, fresh organic lemon juice
- pinch sea salt, or to taste
In a large skillet, bring the water to a boil. Add the asparagus; cook, covered, about 4 minutes; drain.
Return the asparagus to the skillet and add the “butter”; cook over medium heat, tossing until the “butter” melts. Add the lemon juice and salt; toss.
Serves 2 as a side
